Cardoon is a little-known perennial vegetable that is most often grown in containers or borders for its bold ornamental effect. Plants form a large clump of silver-grey thistly leaves that attract much favorable comment. Tall stems of mauve thistle flowers appear in late summer, similar in appearance to an artichoke. In colder climates this is most often treated as an annual. Plants require excellent drainage in the winter to prevent root-rot. Clumps may be divided in early spring. Unique!
