| Also known as Giant Sea Holly, this species produces very large spiny flower heads in an unusual silvery-grey shade, with a greenish cone in the centre. Tends to act as a self-seeding biennial, coming back for several years without becoming a troublesome weed. Flowers are superb for cutting, fresh or dried. Garden mythology claims that English plantswoman Ellen Willmott used to secretly scatter seeds of this plant while visiting other peoples' gardens. Drought tolerant once established.

The eryngiums, or sea-hollies, are typically a tribe of tap-rooted perennials, but Eryngium giganteum is monocarpic. A plant may take two, three or even four years to reach flowering size, depending on how crowded its growing conditions are, but, having flowered, it dies.
